Whiteness, water and bluefish are elements that recall the idea of equilibrium, pureness and health in nature: in fact Equilibrium is the name of the food experience project on the theme of climatic changes and global warming proposed by GranitiFiandre, that we were commissioned by Ikos on the occasion of Cersaie 2018.
The project drew inspiration from the first exhibition dedicated to the pollution issue, which took place prescisely in Bologna in 1972. To transmit to the guests, the concept of pureness through a delicate food experience, we prepared a menu based on rice, potatoes, cheeses, seaweeds, Japanese buns and oily fish. The latter was added as it is a synonym for clean seas.
To underline the innovation, we proposed a spherification show and served molecular cocktails: a creative and spectacular way of speaking about technology through cuisine while for the development of the theme on the melting of the ice packs, we created ice sculptures from one could obtain excellent shaved ice or grattachecche in Italian.
